Back to school

Yes, my big girl is going to 2nd grade. I can hardly believe it!

Back to school means finding ways to pack lunch boxes for our children that include nutritious foods and that they would want to eat (not to mention that won't need microwaving). I have been very disappointed with the choices our school offers to our kids (it did not help the fact that Jamie Oliver's Food Revolution exposed it even more) so like last year, I will be sending my kids to school with a lunch box every day. I admit, it gets hard after awhile...to find ways to be creative. I thought a posting with good kids lunch ideas was in order. Check out this video...It is packed full of great information:

Ideally, I like to send my kids to school with 4 things: a "main course" (such as a sandwich, wrap, roll up, quesadilla, pasta salad etc), a fruit, a vegetable and heathy snack (sometimes I even add a little treat like a tootsie roll or a lolli pop). I may switch things up by replacing the fruit or vegetable for a yogurt, cottage cheese or a piece of string cheese. Basically, I try to make their lunch as balanced as I can. Pictures from the weekend

First belt test for my little girl. A little side note, a couple of days before she fell at the park and hurt herself really bad in her arm. We even took her for X-rays but thankfully it was nothing.

Nonetheless she was hurting and worried that she was not going to be able to test... Being that she is a persistent little girl she pushed through it and took her test.

Menu for the week

Cream of butternut squash/salad
Green lentils and sausage soup - Recipe from here/salad
Spaguetti with bread crumbs - Recipe from here/Caprese salad
Chicken and cheddar souffle- Recipe from here - This recipe works great with leftover rotisserie chicken... So good and easy!/carrots and peas/salad

We got a butternut squash plant out of nowhere (literally, we have no idea where it came from). We are using one of them on a delicious, creamy soup. Stay tuned for my recipe. It is so good! And yes! there are few more coming... I'm thinking butternut squash risotto or maybe pancakes or both!

Perfect cookies for a tea party

My friend Lori shared with me her recipe for lavender cookies, I could not help myself, I had to share it with all of you dear readers... I hope you don't mind Lori, they are too good to not be shared.

1 cup softened butter
1 egg
1.5 tsp baking powder
1 tbsp organic lavender buds
1 cup sugar
1.5 cup flour
1/4 tsp salt

Line cookie sheet w/ parchment or spray with non-stick spray. Beat butter till creamy - add sugar and egg and beat. Mix in dry ingredients. Drop by small spoonful (makes 2 cookie sheets full). Bake at 350 for 10-12 minutes. Let cool on pan. They will be slightly browned on edges and still pale in the center.

Pictures from the weekend

Brace yourselves because this is a long one! We had a whirlwind of a weekend. We decided to go to Jekyll Island to celebrate our little boy's 4th birthday (instead of having a birthday party for him). We thought this would be a good family break. God only knows that this might be the last time we can get away with something like that for him. Before getting to Jekyll we took a little detour to Savannah and had some dinner, Ah! what a lovely town that is! We took a little walk on River St.

The next morning at our destination we all walked (some of us ran) to the beach

And took a dip in the pool. Great way to cool off

Then we headed to historic downtown for a visit to the Turtle Rescue Center, so much fun and very educational

Back in the hotel we had cake and opened presents...

We scored big time with his present... He was clearly smitten

We topped off the night with a shrimp and crab low country boil... So good!

Next morning we woke up early and took a little walk on the beach

We even saw a dolphin! Can you spot her in the picture?

What a lovely weekend that was... This week kiddos went back to school and the routine started all over again. Summer is practically over folks! I for one am looking forward to some cooler temperatures!

What to do with {lots of} home grown cucumbers

I am trying my best to keep up with our crop of cucumbers. I have made tons of lemon + mint cucumber salad, tatziki and snacking strips. The production is more than we can eat... So I decided to find a recipe to pickle them. Instead I found a recipe for freezing them. It sounded it so good I wanted to give it a try. Go check it out if you too want to freeze some for the winter. They are delicious.

We'll be eating these thoughout the winter. Lucky us, right? The flavors of summer in the middle of the winter!

Our big girl had a birthday... We celebrated with a gymnastics party. Miss V's bestie, Miss K (and her twin brother) share the same birthday... We decided to celebrate together. So much fun.
