Catching up...My little man's birthday

Recently we celebrated our little man's birthday with a tour of a fire station and cake back at the house. The kiddos had a great time. My friend Tara made the cake and it was amazing. As for the birthday gifts we found a train table (thank you Kristen!) and a train set (thank you Tracy!). After all the sweets we could handle we stayed until late in the evening talking with our friends the Luthers until the kiddos crashed. Overall, it was a fun, stress free bday celebration.

Rained in + playdate = Cookies

It has been raining here in Georgia like crazy. I am helping out my friend Debbie by watching her kids while she runs errands. Since we are going to be indoors I thought I'd bake some cookies for the kiddos (only this time I made them extra large to make ice cream sandwiches out of them). Here is my favorite recipe:


1/2 cup (1 stick) unsalted butter
3/4 cup packed dark brown sugar
3/4 cup sugar
2 large eggs
1 teaspoon pure vanilla extract
1 (12-ounce) bag semisweet chocolate chips, or chunks
2 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1 teaspoon fine salt

Evenly position 2 racks in the middle of the oven and preheat to 375 degrees F. (on convection setting if you have it.)
Line 2 baking sheets with parchment paper or silicone sheets. (If you only have 1 baking sheet, let it cool completely between batches.)
Put the butter in a microwave safe bowl, cover and microwave on medium power until melted. (Alternatively melt in a small saucepan.) Cool slightly.
Whisk the sugars, eggs, butter and vanilla in a large bowl until smooth.
Whisk the flour, baking soda and salt in another bowl.
Stir the dry ingredients into the wet ingredients with a wooden spoon; take care not to over mix. Stir in the chocolate chips or chunks.
Scoop heaping tablespoons of the dough onto the prepared pans.
Wet hands slightly and roll the dough into balls. Space the cookies about 2-inches apart on the pans.
Bake, until golden, but still soft in the center, 12 to 16 minutes, depending on how chewy or crunchy you like your cookies.
Transfer hot cookies with a spatula to a rack to cool.
Serve and enjoy.

Catching up...Miss V's birthday

To celebrate Miss V's birthday we went to Disney World. It was a surprise birthday celebration so needless to say Miss V was surprised and very excited. We left on Thursday afternoon and drove to our friends the Murphy's in Orlando and spent the weekend with them. On Friday we spent the day at Smirna Beach and afterward we went back to the house for a shrimp boil and some more playing at the pool. We sang happy birthday and went to bed early since we were going to DW the next day. On Saturday we got up, had breakfast and headed to Magic kingdom. We took pictures with a lot of the caracters (Pinoccio, Snow white, Alice in wonderland) and rode some fun rides. Even little M had a great time. Tio Leo and cousin Alejandro drove all the way from Weston to spend the day with us. At around 4:00 PM we headed to Cinderella's castle for a Hair and make up session with the fairly good mother at the Bibidi babidi boutique. Miss V and Miss A had a great time. We ended the day with fireworks - it was such a fun day for the whole family. The next day we got up early to meet Leo and Alejandro for breakfast before we all got on the road to get back to our houses...we were so tired...But happy to have the chance to do it...We are already planning our next trip (maybe for M's birthday next august).

Menu for the week

This week I have come up with the following menu:

Orecciette with cauliflower, arugula and prosciutto/salad
Lentil soup/bread
Italian chicken stew with artichokes, olives and caper/salad
Adobo steaks with pebre/yuca/salad

This week I spend:

Kroger $ 28
Super H $ 14
Trader Joe/Costco $ 19

If I needed and extra meal I could stretch the lentil soup by using it as a sauce over some fettuccine...Delicious! Only add a drizzle of olive oil, Parmesan cheese and fresh cracked pepper...I whole new meal (thanks to my friend Helen for sharing this idea).

My very first sewing project

I decided to make a dress for little Miss V with the sewing machine that my friend Helen gave to me. Finally, after months of having the machine in my craft room, I took a class to learn how to use it. I went to Joann's and while browsing the fabric section I saw this fabric. All I needed to do was to sew the side and hem it. It was that easy. She loves to wear it and tells people that her mami made it for her. I am so glad that she goes along with anything I tell her to wear. I hope she stays like that for a very long time...

Catching up...Back to school

Summer break is over. Both V and M are going back to school. Miss V will be going to 1st grade at Crabapple Elementary and M will be going to preschool at the Alpharetta First United Methodist Church Preschool. I had a little hesitation with M since this is the first time he will be going to "school" other than daycare but to my surprise he really likes it. Both of their teachers are really nice too. I think this is going to be a great year for both of them...I'm a proud mama.

Menu of the week

I have set a goal for myself. I want to be able to feed well my family of 4 (2 adults and 2 children) with a budget of $60 per week. Here is the menu for this week:

California style club sandwich with roasted chicken/pasta salad with pesto, spinach and peas
Black bean soup with queso fresco/salad
Stuffed meatloaf/steamed brocoli/rice
Vegetarian chinese noodle soup

I make enough of these meals to carry us until the end of the week (including lunches). So far I have spent:

$36 Kroger
$14 Super H Mart
$11 Publix

I went over the budget this time...But, keep in mind, sometimes I buy items on sale that I can freeze and use on a later date. I might be over the budget on one week and under on the next. It should all balance out at the end.

Taking the plunge

Ok, here I am. After much thought I decided to write my very own blog. The reason? Nothing other than to have a place to collect thoughts, pictures, ideas, projects and all those little things that interest me.
